MusicKit is the way to go I guess (https://developer.apple.com/musickit/). It is not Open Source but a way to access an Apple Music library and play the music.

I use moOde (+ Allo DigiOne + nuPrime IDA-8 + KEF LS50) for quite some time and love the sound. I'm a big fan. Sound quality is what is unique to moOde. I am a Apple Music user and I'm dependent on it. I want the moOde sound for Apple Music.

I think you answered your own question.
Apple is really a walled garden, if you want your Apple services to work well, Apple expects you to buy their hardware.

You could play your Apple Music on a mobile device and send it to Moode via Airplay or Bluetooth?

I too would love Apple Music support. It is not platform dependendant. I can even find a python implementation: https://apple-music-python.readthedocs.io/en/latest/

It isn't simply whether it can run on a platform, but under what licence it is allowed.  If there is a true open source license for the API then it might be possible, but any restriction on the licence has implications for the licence for Moode as a whole.

Would it be possible to write it as an extension. That way only the extension would fall under the Apple license (if there is such a thing, I could find nothing about it, just that you need a paid developer account to write an Apple Music app/website etc. ).

This would be a fantastic feature. Apple is obviously not open source but they do provide many ways of integration, including browser access. If moode contained any modern web browser the user could navigate to Apple Musics web URL and this should avoid any licensing that would need to be included in the Moode product.
