Can't turn off Bluetooth! - Sehnsucht - 07-11-2021

I've got a Pi Zero W system up and running perfectly with wired headphones, and then I decided to try and get my bluetooth headphones working. That was find too, but now I find I cannot switch back to wired headphones. I'm using the Apple USB -> 3.5mm dongle. When I try and play music now, my mpg log file says:

For each track. I get a popup from the web interface too:
MPD error
Failed to open "ALSA Default" (alsa); Failed to open ALSA device "_audioout": No such device
When I got into the mpd page in the web interface it says:
MPD settings cannot be changed when Audio output is set to Bluetooth.
Although if that means the Output Device under Audio Output, bluetooth is not an option there (just the USB one and HDMI). I don't see much in the way of Bluetooth options except for on the Audio Config page where Bluetooth, pairing agent etc is all turned off. I also tried turning off "Integrated BT adapter" on the System Config page.

I've used M.A.L.P. (Android mpd client) on my other Moode (Pi 4) system with no problem; when using that on this one I've selected Alsa Default as the output. I don't see bluetooth enabled anywhere. Is there a config file somewhere that's got into an odd state?
Edit: When I try and set mpd output to "local" in the bluez config page it hangs the web interface.
Edit: Upon reboot I could then set the output to the USB.
