is there an option in the gui to pull mac address (ethernet and wireless)? if that's not an option where would I find the default credentials to ssh into the box?

The Setup guide contains the default login info

excellent on ability to pull information from system info but I was not able ssh using the credentials on the guide. I was unable to do it via the web ssh (nice builtin function) or kitty

Your best bet is to write a fresh image on a second uSD card and verify that you can SSH into it, then configure that image to your liking.
