Well, that was much easier then I expected. In Mp3Tag I could just select all the tracks of all my compilation albums at once, fill in the new value for the 'Album Artists' field, and save. Done!
Now it works as expected.
Thx all for helping me out.
Slightly more complicated in Picard (have to create a new tag first) but basically the same in this instance.
