I think in looking at this further tonight I see why that Arcade Fire album was playing in AAC last night.
It looks like if you start by choosing Moode Airplay via the Airplay icon in the Music app itself, for whatever reason the app decides to give you the AAC version of the file. That must be what I did last night, because I just did that again and couldn't get any hi-res tracks to play as such.
If however you begin by selecting Moode Airplay in System Preferences - Sound, then the tracks all play in hi-res.
I'd post screenshots but I get an error stating my screenies exceed the 500kb limit.
