I'd like advice on the practicalities of building a method for the moode volume GUI to control the physical volume pot on an analogue amp with a motor encoder as I don't wish to use any software volume management.
Is anyone aware of any projects or elements that could be used?

Uh, "motor encoder" isn't quite what is intended here. Try your luck Googling on the phrase "motorized volume control".
Geek alert - you're entering the wonderful world of CNC (in which I dabbled for roughly a decade, contributing to the LinuxCNC and MachineKit projects). Have fun. Just keep in mind that 90+ percent of the project will have nothing to do with moOde per se.

Naw, I gave up my CNC gear long ago: 2-axis lathe, 3-axis mill, 3D printing, plus experimental stuff. For quite awhile I also mentored high school robotics teams but typically their ‘bots were closer to RC-systems than to CNC.
I’m quite satisfied with volume control in software or my DAC.
