Regarding Spotify skipping, I reduced the bitrate, do you think that will help? Any other little tweaks to settings that might help?
Playback seems to be working just fine when not adjusting a bunch at once. 2-3 or so clicks doesn't cause an interrupt.

If you want aux input then moOde supports the HiFiBerry DAC+ ADC (analog in) and the Audiophonics ES9038 DAC w/S/PDIF add-on (digital in). The WebUI has an Input Select screen for these two devices.

There are other HiFiBerry "pro" boards with analog or digital in but no one was able to provide the technical details on how input switching works with these devices so they were never integrated.

If you are mainly just going to do Spotify Connect and Airplay then as @TheOldPresbyope mentioned start with a Pi-3A+ and moOde 9 series and you should be all set. If you want some amount of future-proofing then get a Pi-5 with official cooler and PSU :-)

@Tim Curtis What about the HiFiBerry DAC+ DSP? https://www.hifiberry.com/shop/boards/dacplus-dsp/
It has Toslink in and out, and analog out. It would be perfect for taking audio out from a TV. Does that board fall in the category that suffers from the control issue you mentioned?
Edit: A quick look in the settings shows it as an option, so I think I've answered my own question!

More info about the volume/skipping issue: It appears that Airplay does NOT suffer similarly!
