The proper thing to do would be to follow up Mr Curtis's info on the sound card and debug the configs and sort it properly.
However, treating the Pi as cattle, and not as a pet, I reflashed the image
This time, on first boot, I hooked it into the amp it will be driving, and then powered it up.
Looks like the DAC is on the right channel, I can stream the currently playing music to my phone as a test (as opposed to another computer to have music as I work, the use case for this)
