This thing is getting out of hand. Like @DRONE7's earlier post that I referenced, I'm trying to get you down to a minimum viable moOde system with only Bluetooth output so we can get some meaningful diagnostic messages when the system goes catatonic. This means no NAS and preferably no DAC hat.
Now that I know about the power supply arrangement of the IQaudIO board and RPi combination, I concerned about the possibility of a confounding effect. How about starting first with just an RPi and an adequate 5v supply?
FYI, for investigating your issue, I've been running moOde 6.4.1 on an RPi3a since about 20 minutes after Tim's announcement---about 8 hours so far---driving a JBL Flip 2 Bluetooth speaker continuously from Radio France Musique Classique Plus without any problem.
I did a little research this afternoon. There have been some reports on the Web of RPi Bluetooth output stopping after an interval. As usual the reports are like UFO reports---all over the map in terms of information supplied by the posters and of guesses from respondents.
There are several ways we could look for Bluetooth-specific messages if you can get to a provably viable moOde system which still suffers Bluetooth stoppage.
