It's not obvious to me what's going on on your end.
Yeah, I don't know that either. I tried it with version 6.7.1 and a raspberry pi 2. same result .... probably there is something special with HDMI, with the audiojack a the transmission is ok.
I'm now also trying with a Pi-3B+ and get back to you ....
1 Hour later: I just tried Raspberry Pi-3B+:It doesn't work for me with the HDMI on the Denon X4100W either. Again, to be clear, everything works, but no audio on the stereo (Denon X4100W) via HDMI.
Then I tried Moode 6.5.2 on the same setup (Pi-3B+) (Kernel 4.19). This version runs from the first boot perfectly with audio output over HDMI !
Try editing /boot/config.txt and comment out the lines below (put # in front of each line), then reboot

#hdmi_force_hotplug=1
#hdmi_group=1
