Oy, vey, not a poltergeist but a faulty memory.
On the two Pi4s I experiment with I normally boot my uSD card via a USB adapter because the USB ports are easier to reach given the way these Pi4s are mounted. When I built the 4.0.0-2moode1+codecs version the other day on one of these Pis, I used a uSD card directly inserted in the harder-to-get-to uSD socket. (Don't ask me why). Guess who forgot which Pi was which today and didn't bother to check if there were a uSD card already present before plugging in my usual USB adapter.
Note to self: get back in the habit of changing the host name for every test build/install.
Still wishing the output from apt-cache made this mistake more obvious.
Sorry for making much ado about nothing. The process outlined in your first post works fine.
