that's why I don't understand what to do with it here (I've used BubbleUPnP server on macOS in the past).

BubbleUPnP Server is a bit of a misnomer, however if you read the website description of what it is and is not, it's clear they state it is not a standalone server program, more a set of extensions for any existing UPnP server instance that helps make certain (mostly older) broker renderers actually work.
The confusion reigns because there is also an Android app called BubbleUPnP (note the lack of "Server") which is a UPnP control point and can be used (with proper subscriber credentials) to directly access Qobuz and stream it to an endpoint such as Moode.
In the use case described here, BubbleUPnP Server doesn't help get from point A to point B, but BubbleUPnP (Android) definitely would.
