It's a false assertion that you should worry about power loss corrupting the Linux file system and bricking your Pi. It's super rare and thus a read-only configuration is unnecessary and will create support headaches because you will be on your own if something in moode software doesn't work.
In my 10+ years on this project I've had maybe 3 SD Cards go bad and none from a sudden power loss. I never worry about just pulling the plug.
Modern, surveillance-grade SD Cards for example Western Digital Purple QD101 are inexpensive and ultra reliable.
