Thank you for your contribution. The airplay problems with my Pi-3B+ and the moOde version 9.x are very similar to your issue. However, in my case the Airplay service, ssh and web server are no longer accessible in the event of an error. I have to do a hardware reset on the Pi to get it running again. I assume the issue is related to the hardware or the version of the Linux kernel.

Thank you for your contribution. I set different SSIDs on my router for the 2.4 and 5 GHz bands to avoid switching between frequency bands. However, I have the same suspicion that the WiFi chip and/or the Linux kernel on the Bookworm 64-bit OS are probably causing the problem.
In the next step i'm going to try it with the exchange of the Pi-3B+ hardware to a new Pi-3B+ board because this has been already ordered.
I will report when the Pi hardware ist exchanged.
