Yes.
The "via ethernet to my router" thing is redundant: you just need "that" Pi in your network. With NFS or SMB file sharing enabled.
In the "other" PIs just mount the shared folder from "that" Pi.
As minimum requirements a Pi3 would suffice, a Pi4 could be more performant. In the end, though, I think that even a Pi3 with 2GB ram (the more, the better, I am keen to assume) would do.
