I'm new to Moode, running the most recent release on a spare Raspberry Pi 3 (Model B V1.2).  

Next up would be finding a good solution for connecting to an external DAC, may have to get a Pi 4 or 5.

The only issue I have at the moment, is that only hdmi is shown as output.

welcome on board.
Your issue can be solved changing the parameter "Integrated audio" from "Kernel mode (Default)" to "Firmware mode (Legacy)".
In other words:
Code:
Menu,
Configure,
System,
Startup options,
Integrated audio

and there is the parameter to change.
After that you should find the "Pi Headphone jack" in the available "output device":
Code:
Menu,
Configure,
Audio,
Audio Output,
Output device

Do you have a DAC currently ? USB connection ? Is it plugged in ? If the answer to all is yes then it should show as available when you use the scan.

If not then please supply some details of device make and model and the output from

(fdealexa answer will get you headphone out from the onboard Pi socket but not for USB or HAT)
