In the following, I've broken your post into parts,
Yes, but this feature applies to pairing from another device (the Bluetooth source) to moOde (the Bluetooth sink). In the case of the Sonos Roam, we're using moOde as the Bluetooth source and the Roam as the Bluetooth sink. The Pairing agent setting shouldn't matter.
Does this mean you have to turn off the HDMI port in moOde's system settings? What Spotify app are you trying to connect to the moOde Spotify Renderer and what does "to work" mean?
Just now testing with moOde 8.2.4 on an RPi3A+, I can connect to the moOde Spotify Renderer and play tracks from the Spotify app on my iPad or on my Pixel 6a phone; I can also connect and play from the Spotify web player (e.g., from within my Chromium/Firefox browsers) on my Linux Mint laptop. This with the HDMI port enabled in moOde.
