The log represents the last time moOde was started via either powering up or rebooting. Changes made via the Config screens won't be reflected in the log till next startup.
After plugging in and powering up your USB audio device it should be listed in MPD Config Audio output dropdown list. If it's not listed then its not obvious to me whats happening.
