Behinger do a selection fo models that would provide for the conversion to digital in real time (there will of course be some latency).

You would then need a software OS to route the signal from input to output.
I think it might be possible using snd_aloop, darkice and icecast, but have no idea how you would make it work.
You will have to do a lot of research as it's not plug and play.

There are some dac hats which offer input and output. Hifiberry offer one that I know of, and there are others.
