None of those will do more than 16-bit 48 kHz A-D conversions (there is a Mk2 of the Rega just released but I couldn't find any specifications regarding it's A-D quality).
That bit depth and sample rate may be perfectly fine your purpose, but if you want to go down the path of extra processing as per @Skip Pack you may find it limiting. I work in restoring audio and find that 24 bit 96 kHz is more than sufficient for high quality jobs.
What are you using for a phono preamplifier now? Perhaps all you need is an A-D converter for capturing the preamp output into your computer. There are plenty of low-price devices available with reasonable quality that will out-perform the A-Ds in the Rega, etc.
